Family-Friendly Thanksgiving Recipes

It’s almost time for Thanksgiving! Rather than recycling old recipes, North Tampa Christian Academy, a Tampa private school, has new recipes for you and your family to cook. Have your little chefs develop this vegetarian Thanksgiving! Cooking is a great bonding activity for your family.

Holiday Nut Loaf

We don’t need a meatloaf for dinner when we can have a nut loaf! This recipe is so simple, all you need is: 

  • 1 onion

  • 1 full ounce of vegetable oil

  • 2 teaspoons of yeast extract

  • 8 ounces of chopped mixed nuts

  • 2 tablespoons ground almonds

  • 4 ounces of wholemeal breadcrumbs 

  • 1 tablespoon sage

  • Pinch of cayenne pepper

  • Salt and pepper to taste

Preheat your oven to 350 degrees. Saute the onion in oil until it’s soft, but not brown. Combine all of the ingredients together. Pour mixture into an oiled oven dish and bake for 30 minutes or until it’s golden brown. You don’t have to spend all day in the kitchen with this easy and delicious recipe!

Cheesy Cauliflower Tots
Your nut loaf needs a delicious side your child will love. Show her that vegetables don’t have to be boring! Incorporate more veggies into your child’s meal by making cheesy cauliflower tots. Tots and cheese — who could pass that up? But revamp the traditional tot snack by replacing the potato with cauliflower. Here’s how.

Ingredients:

  • 4 cups of finely-chopped cauliflower

  • 1 egg, whisked

  • ¼ cup grated parmesan cheese

  • ¼ cup shredded cheddar cheese

  • ⅓ cup whole wheat panko

  • 1 tablespoon garlic powder

  • 1 teaspoon dried parsley

Start by preheating the oven at 375 degrees. Set aside mini muffin tins that have been sprayed with cooking oil. Then, microwave the cauliflower bites in a large bowl. Place a damp paper towel on top, then microwave for two minutes or until the cauliflower is tender. With a dishcloth, squeeze any excess moisture. Add the rest of the ingredients into a mixture. Scoop a tablespoon of mixture and place in each muffin tin. Press down to create a flat tot. Bake for 15 to 20 minutes until the tots are golden brown. Enjoy!

Ice Cream Pumpkin Pie
Who doesn’t love ice cream? This simple recipe is a dish your child will love! Imagine ice cream inside pie. Or don’t imagine — make it happen! A twist on a classic pumpkin pie, this recipe has you scoop chocolate chip ice cream onto a graham cracker crust. Spread a layer of vanilla ice cream mixed with canned pumpkin, and then, garnish the top with chocolate curls. And there you have it — ice cream pumpkin pie!
